Mollie's Basic Pancake & Muffin Mix1 1/3 cup Pancake Mix
1 1/3 cups buttermilk [if you have no buttermilk just add some lemon juice to regular milk and let it sit for about 5 minutes]
2 large eggs
1/2 tsp vanilla extract
1 1/2 tbsp unsalted butter, melted
Butter for the pan (optional)
Mix the wet ingredients and add to the dry ones. Stir gently, don't overmix. Cook over medium heat and spray the pan with cooking spray between each set of pancakes. You can add butter to the pan as well if you'd like. Cook about 3 - 4 minutes on the first side and 2 to 3 on the second side.
