B-Love's Hot Masala

1/2 cup whole cumin
2 tsp mixed peppercorn
1 tsp cardamom
2 sticks cinnamon
1 tbsp fenugreek
1 1/2 tsp whole coriander
3 whole cloves
2 star anise
3 1/2 tbsp Kochi chili
1 tsp dry ginger powder
2 1/2 tbsp dry mustard powder

Toast the cumin, peppercorns, cardmom, cinnamon, fenugreek, coriander, cloves and star anise in a dry wok until the aroma begins to release.

After toasting, grind the spices together. Stir in the Kochi chili, ginger and mustard powder.

Store in an airtight container.
